Okroshka with sausage – a recipe for a hot summer day. An excellent way to have a quick and tasty snack, standing at the stove as little as possible, is to cook okroshka on kefir, with sausage, boiled potatoes, and fresh cucumbers.

Ingredients

  • Fat-free kefir or whey (or kvass) – 2-2.5 l
  • Sour cream – 100 g
  • Boiled or semi-smoked sausage – 150 g
  • Boiled potatoes – 6 pcs.
  • Boiled eggs – 3 pcs.
  • Cucumbers – 2-3 pcs.
  • Green onions – 1 bunch
  • Fresh dill – 1 bunch
  • Salt – 1 teaspoon

How to cook okroshka with sausage:

Directions

  1. Wash the potatoes well. Put potatoes in their skins to boil.
  2. Put the eggs to a boil.
  3. While boiling, cut the sausage into small cubes.
  4. Wash and chop the green onions.
  5. Wash and chop the dill.
  6. Wash the cucumbers and cut them into small cubes.
  7. Cool boiled eggs in cold water, peel. Then chop finely.
  8. Cool the boiled potatoes in cold water, peel, and chop finely.
  9. Mix everything, salt.
  10. Add chilled sour cream.
  11. Pour everything with cold kefir, whey, or unsweetened bread kvass. If you pour okroshka with sausage with fat kefir, it should be diluted with cold boiled water.
