Open Pie Made from Shortbread Cotage Cheese Dough with Apples and Poppy Seeds

Pie made from shortbread cottage cheese dough with apples, poppy seeds and honey turns out to be very tender, juicy and satisfying. Lovers of poppy baking will surely appreciate the taste of this shortbread curd pie.

Cook: 1 hour 20 minutes

Ingredients

For the dough:

  • Curd 9% – 125 g
  • Butter (cold) – 90 g
  • Sugar – 50 g
  • Flour – 200 g (1.5 cups with a capacity of 200 ml)
  • Baking powder – 0.5 teaspoon
  • Salt – 1 pinch

For filling:

  • Apples – 500 g
  • Poppy – 150 g
  • Honey – 50 g
  • Milk – 250 ml
  • Egg – 1 pc.
  • Sugar – 75 g (or to taste)
  • Corn starch – 1 tbsp

Directions

  1. Cut the butter into large cubes for convenience and keep in the refrigerator until you start cooking – it should be cold.
  2. Combine flour, sugar, baking powder and a pinch of salt in a bowl. Stir.
  3. Add cold butter.
  4. Grind the butter and dry ingredients into fine crumbs.
  5. Rub the curd through a fine sieve and add to a bowl.
  6. Knead the dough with quick strokes. Do not knead for a long time, as soon as the dough has gathered in a lump – it’s ready.
  7. Line a 30×20 cm dish with baking paper. Spread the dough over the bottom of the mold with your hands (you can roll it out slightly if you wish).
    Send the dough pan to the refrigerator while you cook the filling.
  8. Grind the poppy seeds in a coffee grinder.
  9. Combine poppy seeds, honey, sugar and milk in a saucepan.
  10. Put on fire and, stirring occasionally, bring to a boil. Without stopping stirring, cook the mass over low heat for 4-5 minutes.
    Remove the saucepan from heat and let the mixture cool to room temperature.
  11. Turn on the oven to heat up to 180 degrees.
    Peel the apples and grate on a coarse grater.
  12. Add grated apples, starch and egg to the milk-poppy mixture. Mix the filling thoroughly.
  13. Spread the filling over the chilled dough in a mold. Smooth the surface.
  14. Bake the poppy seed and apple pie in an oven preheated to 180 degrees for about 45 minutes. In the finished cake, the filling should set completely.
    Remove the cake from the oven and cool on a wire rack.
  15. Shortcrust curd dough pie with poppy seeds and apples is ready!
    Cut it into portions and serve.
