Pork Liver Baked with Carrots, Onions and Cheese

Pork liver is mostly fried or stewed. I suggest a more interesting way – bake the liver in the oven. Pieces of liver and onions with carrots are quickly fried separately, then combined in a mold. Everything is poured with sour cream-tomato sauce and sprinkled with garlic and grated cheese. The result is the most tender juicy liver with vegetables, with a pleasant garlic aroma and under a delicious cheese crust.

Ingredients

  • Pork liver – 500 g
  • Onions – 150 g (1 pcs.)
  • Carrots – 150 g (1 pcs.)
  • Hard cheese – 100 g
  • Fat sour cream – 200 g
  • Tomato paste – 50 g
  • Garlic – 2-3 cloves
  • Salt – 0.75 teaspoon (to taste)
  • Ground black pepper – 0.25 teaspoon + a pinch (to taste)
  • Flour (for breading) – 40 g
  • Vegetable oil – 60-75 ml (4-5 tablespoons)

Directions

  1. We clean the pork liver from films and veins. Then I cut the liver in 2 and soaked it in cold water for 2 hours.
  2. Next, cut the pork liver into medium pieces about 1.5 cm thick. Then rinse the liver pieces under running water and dry with a paper towel.
  3. Peel and wash onions and carrots. Cut the onion into thin half-rings, rub the carrots on a coarse grater.
  4. Sprinkle the pieces of the liver with salt (0.5 teaspoon) and ground pepper (0.25 teaspoon), mix.
  5. Then roll each piece of liver in flour, shaking off excess flour.
  6. In a frying pan, heat 15 ml (1 tablespoon) of vegetable oil, spread the liver, and fry over fairly high heat for 1-2 minutes on each side, until browning. So that the liver does not have time to “start-up the juice”, it is advisable not to lay out all the pieces at once, but to fry in batches. I fry the liver in three steps, adding another 1 tablespoon. a spoonful of vegetable oil.
  7. At the same time, in another pan, heat 30 ml (2 tablespoons) of vegetable oil and fry the onions and carrots over low heat, stirring often, until soft and light golden brown, for 7-10 minutes. We turn on the oven to heat up to 190 degrees.
  8. Combine sour cream and tomato paste in a bowl. Add the remaining salt and black pepper.
  9. Add 30-50 ml of water there (depending on the thickness of the sour cream). I added 30 ml of water. Stir until smooth.
  10. Rub the hard cheese on a coarse grater.
  11. Peel and chop the garlic with a knife.
  12. Grease the bottom of the baking dish with the remaining vegetable oil and layout the fried liver.
  13. Spread the onions and carrots evenly over the liver.
  14. Sprinkle the vegetables with chopped garlic on top.
  15. We fill everything with a sour cream-tomato mixture.
  16. Sprinkle with grated cheese on top. We cover the form with a lid or foil and send it to bake in an oven preheated to 190 degrees for 30-40 minutes.
  17. Pork liver baked with carrots, onions, and cheese is ready.
  18. This dish can be served either alone or with a side dish. The liver, cooked in this way, will surely not leave anyone indifferent!
