Pork Stewed with Zucchini

Pork stewed with zucchini is a simple and hearty home-style dish. The meat is soft and tasty, and the slices of zucchini are tender and juicy. An excellent complete dish for a family lunch or dinner, which even a novice cook can handle.

Servings: 3

Ingredients

  • Pork (pulp) – 500 g
  • Young zucchini – 250 g (1 pc.)
  • Onions (small) – 150 g (2 pcs.)
  • Green onions (feathers) – 10 g (5-6 pcs.)
  • Salt to taste
  • Ground black pepper – to taste
  • Sunflower oil – 50 ml

Directions

  1. Cut the pork pulp into small pieces, for 1-2 bites.
  2. Heat the sunflower oil in a skillet and add the meat.
  3. Roast the pork over high heat for about 5 minutes.
  4. Peel the onion, rinse and cut into rings or half rings.
  5. Add the onion to the meat.
  6. Fry the meat with onions over high heat for 3 minutes, then reduce the heat and simmer the meat for 15 minutes. If the onion is not very juicy, you can add a little water. The main thing at this stage is that the meat is stewed, not fried.
  7. Wash the young zucchini, trim the edges and cut into semicircles. If the zucchini is old, remove the skin from it, cut it in half and remove the seeds.
  8. Rinse green onions, dry, and chop finely.
  9. When the pork is stewed, add the zucchini and green onions to the pan.
  10. Add salt and black pepper, mix everything.
  11. Cook the contents of the pan over high heat for 5 minutes, then over low heat under a lid for another 5-7 minutes. The zucchini should become soft, but not mashed, so you should not mix the meat with the zucchini too often and intensely.

Pork stewed with zucchini is ready. Serve hot.
