Ingredients

  • 1 kg potato (s), (waxy)
  • 2 bell pepper (s), green
  • 2 chilli pepper (s), red
  • 20 olives, green and black, without a stone
  • 2 large tomato (s)
  • 1 onion (s), red
  • 3 tablespoon olive oil
  • Pepper, black, ground
  • 1 teaspoon caraway seeds, ground, Karwia (garden cumin)
  • 2 bay leaves
  • 4 cloves garlic
  • 1 teaspoon turmeric
  • 500 ml vegetable stock
  • salt
  • Parsley, fresh, chopped

Instructions

  1. Peel and halve the potatoes. Wash green peppers and cut into 4 parts. Wash the tomatoes and cut them in half. Cut the onion and garlic into small slices.
  2. Spread the bottom of a large roasting pan (rectangular) with olive oil, halve the potatoes, halve the tomatoes, add the chilli cut into thin strips. Add olives, onions, garlic and parsley in a split manner. Then mix everything well together with the specified spices. Pour the vegetable stock into the baking pan.
  3. Preheat the oven to 180 ° C. Leave the whole thing in the oven for about 25-35 minutes (25 minutes with convection) on the lowest rack at 180 ° C.
  4. Serve warm.
  5. Goes very well with chicken or leg of lamb.
