Ingredients
- 1 kg red cabbage
- 8 clove (s)
- 8 cardamom pods
- 2 teaspoons mustard seeds
- 2 teaspoon fenugreek, seeds
- 2 teaspoons cayenne pepper
- 1 teaspoon cinnamon
- 1 teaspoon anise
- 2 bay leaves
- 30 g hee, or butter
- 25 g iner root
- 1 tablespoon sugar
- 2 apples
- 4 tablespoon red wine vinegar
- 250 ml red wine
- 250 ml water
- salt

- Finely chop or grate the red cabbage.
- Stir red wine vinegar, mustard seeds, fenugreek seeds, cumin, cinnamon, anise and cayenne pepper into a marinade, mix with the red cabbage and leave to stand covered for at least 2 hours.
- Heat the butter or ghee in a saucepan, add the sugar and let it caramelize slightly. Add red cabbage, coarsely grated apples, chopped ginger and bay leaves, salt and pour red wine and water on top. Cook over medium heat for approx. 40 minutes. Finally, if you like, season with vinegar and / or red wine.
