Rucola – Lollo Rossa – Salad with Mozzarella, Peach and Ham

Instructions

Chop the lollo leaves as desired, remove the stalks from the rocket and distribute on the plates.
Peel off the skin of the peaches, then quarter or eighth as desired and distribute on the plates. Tear the mozzarella into small pieces and also place on the plates. Chop the Parma ham so that each slice becomes approx. 4 pieces and then divide it. Brown the pine nuts in the pan, chop them a little and sprinkle on the salad. Lightly season the salad with salt and pepper. Next, grate the pecorino. Put some raspberry vinegar and olive oil on the salad plates (you can also draw a circle with the vinegar if the plate is big enough). Finally, distribute the pecorino on the salad.
