Ingredients
- 50 ml sweet cream
- 1 tablespoon pastis
- 1 small orange (s), add the juice
- 1 teaspoon cane sugar
- 1 teaspoon vinegar, (raspberry vinegar)
- 1 teaspoon fennel seeds
- 1 pinch cumin
- 0.5 teaspoon ½ sea salt
- some black pepper, freshly ground

- Crush the fennel seeds and salt in a mortar. Put orange juice, cream, fennel salt mixture and sugar in a bowl and stir until the sugar and salt dissolve.
- Briefly stir in vinegar, pastis and caraway seeds, season with pepper.
- Often served with winter salads and / or salads with fruit in the south of France
