Ingredients

For the filling:

  • 400 g apples
  • 2 tablespoon lemon juice
  • 100 ml white wine or apple juice
  • 1 packet dessert sauce, vanilla flavor for cooking
  • 50 grams sugar
  • 50 g almond (s), sliced

For the sponge cake base:

  • 4 medium egg (s)
  • 1 medium egg yolk
  • 70 g suar
  • 1 packet vanilla sugar
  • 80 g wheat flour
  • 1 pinch baking powder

Instructions

  1. Grease a baking sheet (30 cm) and cover with baking paper. Preheat the oven to 200 ° C.
  2. Filling:
  3. Peel the apples and cut into fine sticks. Steam the apples with lemon juice and 50 ml white wine or juice for about 5 minutes. Mix the sauce powder with sugar, stir in the rest of the white wine or juice until smooth, add to the apple mixture and bring to the boil while stirring. Take the saucepan off the heat, fold in the almonds and let cool.
  4. Biscuit Dough:
  5. Beat the eggs and egg yolks in a mixing bowl with a hand mixer on the highest setting for 1 minute until frothy. Sprinkle in sugar and vanilla sugar over the course of 1 minute while stirring and beat the mixture for another 2 minutes. Mix flour with baking powder and stir in briefly on the lowest setting. Smooth out the dough on the baking sheet and bake immediately for about 10 minutes.
  6. Carefully loosen the sponge cake, turn it out onto a piece of baking paper sprinkled with sugar and carefully peel off the baking paper.
  7. Spread the apple filling evenly on top, leaving 1 cm free on each of the long sides. Roll up the plate from the long side and let it cool completely.
  8. If desired, sprinkle with powdered sugar before serving or decorate as desired.
  9. Tip:
  10. * If you want to prepare the roll for diabetics, replace the sugar in the filling with 30 g fructose and in the dough with 50 g fructose. Then of course the cake has fewer calories.
