Ingredients
- 1 large stewed cucumber (the yellow ripe ones) approx. kg
- 1 small onion (s)
- 30 g butter
- 1 teaspoon mustard seeds, yellow
- 200 ml vegetable stock, approx
- 5 tablespoon whipped cream
- 150 g cream cheese, natural or herbs
- 3 tablespoon parsley, chopped
- salt and pepper
- some balsamic vinegar, white, to taste

- Peel the cucumber, cut in half lengthways and scrape out the seeds with a spoon. Cut the cucumber meat into not too large pieces. Peel the onion and cut into wedges. Simmer both in the melted butter in a pan (medium heat). When it starts, pour in some broth and let it boil down, continue in this way until the cucumbers are almost soft. The cucumbers should not brown or brown at all. Then add the rest of the broth, mustard seeds, cream and cheese, stir everything well and let it get hot. Season to taste, sprinkle with the chopped parsley.
- If you like, stir about 1 teaspoon of white balsamic vinegar into your portion.
- This dish tastes good on its own with bread, but also with pan-fried foods or fried potatoes.
- Instead of the ripe yellow cucumbers, you can also use the thick green country cucumbers. Non-vegetarians melt 150g of bacon instead of butter, let it brown and stew the cucumbers in it.
