  • 2 fennel
  • 3 medium potato (s)
  • 1 cup lentils, red
  • 1 large apple
  • salt
  • some oil for frying

Vegan Fennel Vegetables with Red Lentils and Apple Rings

Instructions

  1. Cut the onion and fennel into fine strips. Put the fennel greens aside beforehand. Peel and dice the potatoes. Fry the vegetables in a pan with oil over high heat until golden brown. When the vegetables are well fried, pour a dash of water over them, season with salt and cover. Set the heat to medium and let the vegetables simmer for about 20 minutes.
  2. Boil the lentils in a saucepan with twice the amount of water for 10 minutes. (Consider longer cooking times; see instructions on the package.) Core the apple and cut into rings. Fry the apple rings in a pan with plenty of oil.
  3. Mix the vegetables with the lentils. Use the apple rings and the washed and dry-shaken fennel greens to garnish.
