Air Manna with Milk Impregnation

Mannik is a popular homemade semolina pie. The simplicity of its preparation, the availability of the ingredients used, and the excellent taste of baking as a result – it is for these qualities that everyone fell in love with the manna. Today we will prepare one of the options for manna – without additives, but with milk impregnation. Such manna turns out to be incredibly airy, moderately moist, tender, and perfect for everyday tea drinking.

Servings: 6

Ingredients

  • Semolina – 135 g
  • Eggs – 4 pcs.
  • Sugar – 100 g
  • Vanilla sugar – 1.5 teaspoon

For impregnation:

  • Milk – 300 ml

To prepare the form:

  • Vegetable oil – 1 teaspoon
  • Bread crumbs – 1 tbsp

For the filling (optional):

  • Powdered sugar – 1-2 tbsp

Directions

  1. Crack eggs and divide them into whites and yolks. Set the egg whites aside for now. Combine egg yolks and sugar in a deep bowl. Mix thoroughly.
  2. Place the egg whites in a separate bowl and beat on a high mixer speed for about 3-4 minutes, until whitening, fluffy and crisp. Transfer the beaten egg whites to a bowl of the yolk mixture.
  3. Gently, with a spoon or a spatula, mix the yolks with the whites with upward movements, so that the mixture does not lose its airiness. Add semolina and vanilla sugar.
  4. Knead the dough gently until the semolina is evenly distributed in it.
  5. Grease a baking dish (I have a diameter of 24 cm) with vegetable oil and sprinkle with breadcrumbs.
  6. Put the airy dough for the manna in the prepared form.
  7. Bake the manna in an oven preheated to 180 degrees for about 40 minutes.
  8. Pour milk into a saucepan or stewpan, set to maximum heat, and bring to a boil.
  9. Without turning off the oven, carefully remove the form with manna and evenly pour milk over the surface of the cake. Send the manna mold back to the oven for about 5 minutes.
  10. Unusual manna with milk impregnation is ready. Cool slightly, remove from the mold and serve, sprinkled with powdered sugar if desired. Such delicate and moist manna is equally good both hot and cold.
