Stuffed Air Donuts

Incredible dough! Very, very tender, tasty, and airy Berliners – donuts with chocolate and strawberry filling. And cooking is insanely simple!

Ingredients

  • For the test:
  • Butter (soft) – 30 g
  • Milk (warm) – 100 ml
  • Water (warm) – 100 ml
  • Egg – 1 pc.
  • Flour – 400-450 g + for working with dough
  • Dry fast-acting yeast – 7 g
  • Sugar – 60 g
  • Salt – 0.5 teaspoon filling:
  • Strawberry jam
  • or chocolate ganache for the chocolate ganache:
  • Chocolate – 90 g
  • Cream 33% – 100 ml
  • Butter – 10 g
  • Vegetable oil – for frying and greasing the cup
  • Powdered sugar – for sprinkling donuts

Directions

  1. Sift flour into a cup (400 g – 3 glasses of 200 ml volume), add yeast and salt. Mix with a whisk.
  2. Beat the egg, soft butter, and sugar with a mixer.
  3. We make a depression in the flour, pour warm milk, warm water, and an egg-oil mixture into it. Knead the dough with a spoon.
  4. The dough is going into a lump – add a little more flour and knead the dough with your hands.
  5. Knead the dough for 7-10 minutes, add flour if necessary. The dough should be soft, smooth, and loose. Grease the cup with oil. We form a ball from the dough and put it in a cup. Cover the cup with foil and put it in a warm place to rise, for about an hour.
  6. Cooking the chocolate filling: break the chocolate into pieces, add the butter.
  7. Bring the cream to a boil. Pour chocolate and butter with hot cream.
  8. Mix well until smooth and leave to cool completely.
  9. The dough has increased, became airy and porous. We knead the dough.
  10. Divide the dough into 2 parts, which we roll into balls, cover with foil and leave for 10 minutes.
  11. The dough is fluffy and no longer sticks to your hands. Sprinkle the surface with a little flour and roll out the dough into a layer 1.5 cm thick.
  12. Cut out circles of the same size from the dough using a mold with a diameter of 5 cm.
  13. Pour oil into a saucepan (2.5 cm from the bottom), heat it to 180 degrees – this is medium heat (you can check – put a wooden skewer in oil: when it starts to foam, you can fry). Dip the donuts in hot oil.
  14. Fry donuts for 2-3 minutes on both sides.
  15. Turn over twice for even browning until golden brown.
  16. Put the finished donuts on a paper towel so that it absorbs excess oil.
  17. Fill warm donuts with strawberry jam and chocolate filling using a pastry bag or a syringe with a long nozzle.
  18. Sprinkle the stuffed donuts with icing sugar on top. Airy donuts with strawberry and chocolate filling are ready. Bon Appetit everyone!
