- 2 kg potato (s) (triplets), small
- 500 g tomato (s) (date)
- 150 g lamb`s lettuce, alternatively rocket
- Basil paste
- Apple juice
- olive oil
- Balsamic vinegar, Bianco
- Salt and pepper, black
- 1 clove garlic

- Wash small potatoes, cut in half and mix in a bowl with good olive oil so that they are lightly oiled all around. Place with the cut surface facing down on a baking sheet and bake at approx. 175 ° fan for approx. 20-25 minutes until they are cooked. Immediately after baking, lightly salt on the baking sheet.
- Wash the small date tomatoes and cut them in half as well. There should be about as many halves as there are potato halves. Wash and sort the salad.
- Salad dressing:
- Mix a little balsamic vinegar (not too much, as it is very intense), a lot of good olive oil and a dash of apple juice with a little salt and a lot of fresh black pepper. Stir the basil paste into the salad sauce. Squeeze the garlic clove and add. Let the salad sauce steep a little. Mix with potatoes and tomatoes just before serving.
