Ingredients
- 900 g flour (300 spelled, 600 kamut)
- 100 g cornstarch
- 2 teaspoons salt
- 2 egg (s)
- 500 pumpkin (s), peeled
- 150 ml buttermilk
- 200 ml milk
- 55 g oil, (corn oil)
- 1 cube yeast
- 30 g honey
- Pinch nutmeg
- Pumpkin seeds and pumpkin seed oil

- Boil the pumpkin, drain and puree. Then work all the ingredients into a smooth dough. Let rise for 40 minutes.
- Knead and rest again and let rise well.
- repeat the whole thing twice and then put in a bread pan / loaf pan. Let go again.
- Before baking, brush the surface lightly with water and sprinkle with pumpkin seeds.
- Preheat the oven to 200 degrees and bake the bread on the middle rack for 15 minutes. Then switch back to 160 degrees and bake for another 45 minutes.
- Put it on a rack to cool and, as a special treat, coat the bread with fine pumpkin seed oil.
