- 250 g beans, (black-eyed peas)
- 1 yellow pepper (s)
- 1 red pepper (s)
- 3 spring onion (s)
- 1 bunch chives
- chervil
- 1 teaspoon mustard, hotter
- 50 ml balsamic vinegar
- 150 ml olive oil
- salt and pepper

- Soak the beans in plenty of cold water for 12 hours, then boil them in fresh water until they are soft.
- Finely dice the bell pepper, cut the spring onions and chives into rings.
- Mix the other ingredients into a dressing, mix everything together and let it steep a little if possible.
