Ingredients
- 200 g feta cheese, preferably made from sheep`s cheese
- 1 cup natural yoghurt
- 1 tablespoon sesame paste (tahini), heaped
- 1 clove garlic
- 2 sprigs thyme
- 1 teaspoon spice paste (harissa)

- Finely puree all ingredients in a blender.
- Important: no salt. The cheese is usually salty enough.
- Depending on your taste, you can also add olives, pieces of paprika, tomatoes, cumin or sweet paprika powder. The imagination knows no limits! The basic recipe actually only consists of feta and yogurt.
- If the paste becomes too firm, add a little more yogurt or a dash of milk to make it creamier.
