Ingredients

  • 100 g quinoa, red
  • 500 g spinach leaves, frozen
  • 2 tablespoon breadcrumbs (spelled breadcrumbs)
  • 2 egg (s)
  • 100 g mountain cheese, rated
  • 1 teaspoon sea salt
  • 2 teaspoons pepper
  • 1 teaspoon spice mixture (Magic Dust)
  • 4 salsiccia
  • 8 slices bacon (root bacon), Austrian or bacon
  • 8 walnuts
  • 2 tablespoon, heaped clarified butter
  • 200 ml water

Instructions

  1. Let the spinach thaw in good time and force the excess water out.
  2. Wash the quinoa and bring to the boil with the specified amount of water, simmer for about 20 minutes. Remove the saucepan from the stove and let the quinoa soak for another five minutes. Then let it cool down.
  3. For the patties, stir together the quinoa, spinach, beaten eggs and cheese and season. Use the breadcrumbs to make an easily malleable mass. With the help of, for example, dessert rings, 8 cm in diameter, shape eight patties and fry them in clarified butter until golden brown. If necessary, keep the patties warm in the oven at 80 ° C.
  4. Cut the root bacon into narrow strips and fry in a pan. Cut the salsiccia into eight slices each and fry them with the bacon until crispy. Finally fry the walnuts briefly.
  5. To serve, cover each patty with four slices of fried salsiccia and garnish with the root bacon and walnuts.
