Ingredients

  • 135 g almond (s), round
  • 160 g powdered suar
  • 85 grams flour
  • 8 egg whites
  • 1 pinch (s) salt
  • 150 g butter
  • 210 g cherry (s)

Instructions

  1. Preheat the oven to 200 ° C top / bottom heat. Butter and flour a biscuit tin or a muffin tin or put paper liners in the hollows.
  2. Briefly beat the egg white with a pinch of salt with the hand mixer, do not beat until stiff, it should just be slightly frothy. Mix the ground almonds, powdered sugar and flour and stir quickly into the battered egg white. Finally mix in the melted butter. Pour the batter into the molds.
  3. Core and halve the cherries. Put a few cherry halves on each friand or, in the case of mini friands, put a whole cherry in each piece.
  4. Bake in the preheated oven on the middle rack for about 25 - 30 minutes until golden brown. The friands should give way slightly to pressure. Take out of the oven and let cool down in the tin for 5 minutes, transfer to a wire rack and let cool down completely. Sprinkle with powdered sugar and store in an airtight container.
  5. Tip: Half the amount of batter makes 8 fries in 80 ml muffin tins or approx. 14 mini fries in mini muffin tins. The baking time is then only approx. 18 minutes.
