  • 2 onions)
  • 1 apple
  • 1 shot red wine, great
  • some flour
  • 1 tablespoon rapeseed oil
  • salt and pepper
  • thyme

Instructions

  1. Peel the onions, halve them, and slice into thin strips. Peel the apple, remove the core, and dice. Shred the chicken liver or separate any tendons.
  2. Heat a pan over medium-high heat, brush with rapeseed oil, then add the onion slices. Fry for 2-3 minutes until softened.
  3. Add the chicken liver and fry for 3-4 minutes, stirring often, until cooked through.
  4. Pour in the red wine to deglaze the pan, add the diced apple, and simmer for 3-5 minutes, stirring often.
  5. Dust the mixture with flour and stir until the sauce reaches desired thickness.
  6. Season to taste with salt, pepper, and thyme.
  7. Serve with bread or baguette.
