Cornmeal Bread with Corn Kernels, Peppers, Red Onions, and Cheese

This bread is made from cornmeal with the addition of corn kernels, peppers, red onions, and cheese.

Ingredients

  • Corn grains, fresh or frozen (thawed) – ¾ cup
  • Red onion (finely chopped) – 1/3 cup
  • Parmesan (chopped on a grater) – 3 tbsp
  • Jalapeno peppers (seeded and finely chopped) – 2 tbsp
  • Wheat flour – 100 g (about ¾ cup)
  • Yellow corn flour – ¾ cup
  • Baking powder – 2 teaspoon.
  • Chili powder – 1.5 teaspoon
  • Salt – 1 teaspoon
  • Milk – ¾ glass + 2 tbsp
  • Olive oil – 2 tbsp
  • Honey – 2 tbsp
  • Large egg (slightly beaten) – 1 pc.
  • Vegetable oil

Directions

  1. Turn on the oven to preheat to 210 degrees.
  2. In a large bowl, combine all flour, cheese, baking powder, chili powder, and salt. Collect flour up a hill, make a depression in the center.
  3. In a separate bowl, combine milk, butter, honey, and egg. Pour this mixture into a well in the flour and mix well. Add corn kernels, onions, and jalapenos to the dough.
  4. Place a cast-iron pan in a preheated oven for 5 minutes. Then remove from the oven and brush with vegetable oil. Pour the dough into the skillet and bake the cornbread in the oven for 18 minutes.
  5. Remove the finished cornbread immediately from the pan and serve hot.
