Dinner on a Baking Sheet: BBQ Chicken and Brussels Sprouts

This simple yet delicious dinner is prepared on one baking sheet: a great idea for an everyday dinner, after which you will not be waiting for a pile of dishes. Divide the baking sheet visually into three zones. In one part, chicken thighs will be baked in a glaze made with barbecue sauce, in the middle – sweet potato slices seasoned with chili powder, and in the third zone – halves of Brussels sprouts. First, only chicken is baked, and in the middle of the baking, vegetables are added to it. The whole dinner will be ready at the same time. Divide into bowls or place the entire baking sheet on the table and enjoy.

Ingredients

  • 4 chicken thighs with skin and bones (0.7 – 0.9 kg.)
  • 2 small sweet potatoes, peel, and cut each into 6-8 wedges
  • 1/4 Art. extra-virgin olive oil
  • 1/4 teaspoon chili powder
  • 350 gr. (about 3 cups) Brussels sprouts, cut in half or 4 pieces depending on size
  • 1/4 Art. BBQ sauce

Directions

  1. Preheat oven to 220 ° C and line a rimmed baking sheet with parchment paper. Place the chicken thighs skin side up on one side of the baking sheet, evenly spreading them out. Bake until they are firm on the outside, 15 minutes.
  2. Remove the baking sheet from the oven and place the sweet potato wedges in the center. Drizzle 2 tablespoons of sweet potatoes. l. olive oil and sprinkle with chili powder and salt to taste. Use tongs to stir the sweet potato slices so that each piece is evenly coated with oil and spices. Place the Brussels sprouts mixed with 2 tablespoons of water into the remaining empty space on the baking sheet. l. olive oil, salt, and black pepper to taste. Spread the Brussels sprouts, slice down, and brush all sides of each chicken thigh with barbecue sauce.
  3. Return the baking sheet to the oven and bake until the chicken is tender and the meat core temperature is 71 ° C, and the Brussels sprouts and sweet potato wedges should be soft and cooked for another 25-30 minutes. Toss vegetables with selected juices and serve.
