Filled Diet Cupcakes

For those who look after the figure. Cupcakes are not very sweet, don’t think that this is a pastry bomb. πŸ™‚

Ingredients

  • Low-fat yogurt – 70 g
  • Egg – 1 pc.
  • Oat flakes – 25 g
  • Bran – 25 g
  • Raisins (dried apricots) – 30 g
  • Soda – 0.5 teaspoon.
  • Semolina – for sprinkling on molds
  • For filling:
  • Cottage cheese – 100 g
  • Yogurt or milk (optional) – 1 tablespoon
  • Vanillin – to taste
  • Berry or berry syrup (optional) – to taste

Directions

  1. Soak the raisins for 30 minutes. Grind it very finely in a blender. Add egg, yoghurt and beat well.
  2. Add flakes, bran and soda. Mix.
  3. Sprinkle the molds with semolina, put the dough in the molds.

    Bake in a preheated oven at 160 degrees for about 15 minutes.
  4. For the filling: if you have granular cottage cheese, beat it in a blender with a spoonful of milk or yogurt. Add vanillin to it.
  5. Cut the muffins into shortbreads, put the filling. If desired, you can add berries or berry syrup to the filling.
