Ingredients

  • 600 g fish fillet (s) (pollack fillet)
  • 1 roll (s), stale
  • 1 onion (s), finely chopped
  • 1 lemon (s) (organic), the zest it
  • 2 tablespoon lemon juice
  • 1 bunch parsley, chopped
  • 100 g pickled cucumber (s), finely diced
  • 100 g cheese (Gouda), diced into small pieces
  • 3 egg yolks
  • salt and pepper
  • breadcrumbs
  • Clarified butter

Instructions

  1. Finely dice the onion, chop the parsley. Soak the bread roll in water and squeeze it out well. Wash off the pollack, dry it, cut it into small pieces and puree it. Pat the gherkins dry and dice them, also dice the Gouda. Rub the zest of the lemon and squeeze it.
  2. Now mix the pureed fish, onion, parsley, bread roll, pickles, Gouda cheese, lemon peel and 2 tablespoons of juice as well as the 3 egg yolks in a bowl and season with salt and pepper. If the mixture is not firm enough, add breadcrumbs.
  3. Shape meatballs, turn in breadcrumbs and fry in a pan with clarified butter for about 5 minutes on each side. Serve garnished with lemon wedges.
