Ingredients

  • 600 g fish, waxy scampi can be used with or instead
  • 2 cans tomato (s), diced
  • 1 piece (s) ginger, (fresh!)
  • 4 onion (s), as mild as possible (red or vegetable onions)
  • 3 cloves garlic
  • 1 bunch thyme
  • 2 tablespoon turmeric
  • 1 teaspoon salt
  • 200 g basmati
  • 2 tomato (s)
  • 1 chilli pepper (s)
  • 1 small onion (s)
  • 2 tablespoon olive oil
  • 1 pinch (s) salt

Instructions

  1. Really easy to do. Since you can continue to equip and prepare while cooking, the whole thing does not take more than 30 minutes in total!
  2. Wash rice, simmer on a very low heat for 20-30 minutes without stirring.
  3. Dice the onions (or cut into slices) and steam them until translucent. Press or finely chop the garlic, add. Peel and finely chop the ginger (tip: also press through a garlic press!) And mix in. Do not set the flame too high, otherwise the ginger will burn with the garlic! Then add diced tomatoes, salt (try !!), turmeric and thyme. The whole thing is then simmered down nicely.
  4. The dip is used on Reunion Island to flavor dishes. You eat a little with every bite.
  5. To do this, chop the onions, chili peppers and tomatoes into the finest pieces, add the oil, salt and possibly a little pepper and mix well. It comes on the table in a small bowl.
  6. The fish is cut into pieces 1 by 1 cm and when the rice is cooked, added to the sauce. Let the whole thing stand on the stove for about 5 minutes (not too long, otherwise the fish will overcook!) And then serve over the rice.
  7. Because the spiciness is not in the main course, everyone can decide for themselves exactly how spicy their food should be. So this is something for the whole family.
