Ingredients

  • 2 large potatoes
  • 150 g breadcrumbs
  • 1 egg (s)
  • 100 g parmesan, rated (fresh)
  • 100 grams flour
  • 4 tablespoon mayonnaise, homemade (see recipe below)
  • salt and pepper
  • Oil, for deep-frying
  • Mayonnaise:
  • 1 egg (s), (complete)
  • 350 ml oil, (corn oil)
  • 1 tablespoon vinegar
  • Salt and pepper, salt
  • chives
  • 1 teaspoon mustard (less if you like)

Instructions

  1. Peel the potatoes and cut into thick (approx. 1.5cm) fries sticks. So that these look good when you serve them, make sure that they are all equally thick and long. Pre-cook the sticks for 4 minutes.
  2. Mix the breadcrumbs and parmesan cheese.
  3. First turn the drained frit sticks in the flour, then pull them through the stirred egg and finally through the cheese mixture. Heat a deep fat fryer to approx. 180 ° (or simply heat oil in a saucepan) and fry the chopsticks until they are golden yellow. Drain well on a layer of kitchen paper. Sprinkle with salt and pepper and serve 3-4 pieces of mayonnaise with a spoonful of mayonnaise in a moose glass.

  5. Put the whole egg in a tall mug along with salt and pepper and mustard. Add half of the oil. Dip a hand blender and blend with full power. When the sauce thickens, pull the stick slowly and evenly upwards. Mix in the rest of the oil and add the vinegar at the very end. Season to taste and add the chopped chives (amount according to personal taste). The amount of mayonnaise makes more than you need for the recipe. Excellent for a potato salad that you can use to make the next day.
