Ingredients

  • 500 g pasta, (spiral pasta)
  • 1 glass pickled cucumber (s)
  • 250 g Cabanossi
  • 4 egg yolks
  • 6 hard-boiled egg (s)
  • 2 bell pepper (s)
  • 1 small Can (s) peas and carrots
  • 500 ml sunflower oil
  • 2 cloves garlic
  • 2 apples
  • 2 teaspoons mustard, medium hot

Instructions

  1. Mix the egg yolks with the mustard and a little salt and pepper with a mixer. Slowly (!) Add the oil while stirring. A relatively solid mass is created. A little cucumber water spices the mayo and gives it a better consistency. Add the very finely chopped garlic to taste. The mayo is now ready.
  2. Cook the noodles al dente and rinse under cold water. Chop the hard-boiled eggs, cabanossi, pickles (save the liquid!), Peppers and the apples and place in a large bowl. Add the peas and carrots after draining and mix everything with the mayonnaise. Now add the cold noodles and season with salt and pepper. If necessary, cucumber water can also be added. There can be a lot of mayo in the salad, the noodles soak up a lot of it overnight. Place the pasta salad in the refrigerator overnight and stir well before consuming.
