Green String Beans with Chanterelles

Mushroom time is in full swing. Delicious and light combination of chanterelles with green beans. For vegetarians and not only.

Ingredients

  • Chanterelles, small in size – 300 grams
  • Green beans – 100 grams
  • Salt
  • Olive oil – 1 tbsp
  • Shallots – 2 pcs.
  • Garlic – 1 clove (peel and cut into halves)
  • Lemon peel – 1 strip
  • Broth – 50 ml
  • Butter – 1 tbsp
  • Ground black pepper

Directions

  1. Peel the mushrooms.
  2. Peel, wash, and cut the beans in half. Boil water in a saucepan, salt generously and boil the beans.
  3. Pour the water through a colander, rinse the beans with cold water and dry.
  4. Peel the onion and chop finely. Heat the olive oil in a frying pan and simmer the chopped onion for 2-3 minutes.
  5. Add mushrooms, garlic, lemon peel and simmer for 2 minutes over medium heat.
  6. Then add the beans and pour over the broth. Add butter and stir. Salt and pepper green beans with chanterelles. Remove the garlic halves and lemon peel and discard
