- 80 g lamb`s lettuce
- 150 g cherry tomato (s)
- 1 avocado (s)
- 6 slices goat cheese, as thick as a finger
- 6 slices bacon
- 2 teaspoons coriander seeds, crushed
- 7 tablespoon balsamic vinegar
- 4 tablespoon olive oil
- 3 teaspoons, heaped honey
- salt and pepper
- 60 ml garlic oil
- 1 small baguette (s)
- 20 g parmesan, freshly rated

- For the dressing, mix well the balsamic vinegar, olive oil, coriander, 1 teaspoon honey and a little salt and pepper. Clean, wash and spin dry the lamb`s lettuce. Pour into a salad bowl and let it steep in the dressing for the rest of the preparation time. Halve 100 g of the tomatoes, dice the pulp of the avocado and sprinkle both over the salad. Wrap the goat cheese slices with a slice of bacon each. Heat some of the garlic oil in a pan. Fry the goat cheese in it. When one side starts to brown, turn it over and, when the desired browning is achieved, drizzle the remaining honey onto the cheese parcels and turn them again briefly. Place the goat cheese parcels on the salad and serve while hot. Cut the baguette in half and spread the remaining garlic oil on top. Cut the remaining cherry tomatoes into small pieces and distribute them on top, sprinkle the bread with freshly grated Parmesan and bake for 5 - 8 minutes at 180 °. It is best to prepare it at the same time so that the baguette can be served hot with the salad and the goat cheese packets.
