Linzer Macaroons with Jam

Very, very tender, and beautiful Austrian Linzer cookies with jam and almonds. And cooking is very simple! Very often, these cookies are made for Christmas. Fragrant, with a rich nutty flavor and bright jam – these Christmas almond cookies are sure to decorate your table.

Ingredients

  • Butter (chilled) – 180 g
  • Egg – 1 pc.
  • Sugar – 100 g
  • Chopped almonds – 35 g
  • Wheat flour – 300 g (2 cups with a capacity of 250 ml)
  • Vanillin – 1.5 g (pinch)
  • Salt – 1/3 teaspoon
  • Raspberry jam (any) – to taste
  • Powdered sugar – for sprinkling on cookies

Directions

  1. Sift flour into a cup, add almonds, chopped in a blender. Add sugar, vanillin, and salt. Mix with a whisk.
  2. Rub cold butter on a coarse grater. Mix the butter with flour.
  3. Add the egg and quickly knead the dough.
  4. We wrap the dough in foil and put it in the refrigerator for 30 minutes.
  5. We turn on the oven and heat it up to 190 degrees. Roll out the dough into a thin layer (3 mm) on parchment paper. Cut out circles (5 cm in diameter). In half of the circles in the middle, cut out small holes of arbitrary shape (I have stars).
  6. We bake shortbread cookies in a preheated oven at a temperature of 190 degrees for 10-12 minutes, until a slight blush. Cookies are baked very quickly, do not overdry them.
    We take the finished cookies out of the oven and cool.
  7. Put some jam in the middle of the whole cookie. And sprinkle the cookies with a hole with powdered sugar. Cover the biscuits with jam on top with the biscuits sprinkled with powder.
