Ingredients

  • 2 beef roulade (s)
  • 2 teaspoons mustard
  • 2 onions)
  • 100 g pickled cucumber (s)
  • 60 g ham, lean (salmon ham)
  • 1 tablespoon margarine (semi-fat margarine)
  • 20 g tomato paste
  • 125 ml meat stock, instant
  • 1 carrot (s)
  • 1 piece (s) celeriac
  • Sauce thickener
  • salt and pepper

Instructions

  1. Chop the carrot and celery, then cut the onions, cucumber and salmon ham into cubes.
  2. Season the meat slices with salt and pepper, brush with mustard and cover with 2/3 of the onion and cucumber cubes and all of the salmon ham. Roll up the meat slices and tie them together with kitchen twine or fix with roulade needles.
  3. Heat the margarine in a pressure cooker and roast the remaining onion cubes in it. Add the tomato paste and roast. When it gets to the bottom of the pot, deglaze with a little water. Repeat this process until a dark sauce has formed.
  4. Pour the meat stock, add the roulades to the boiling sauce without frying them. Add the root vegetables and the remaining cucumber. Close the pressure cooker. Cook the meat for approx. 20 minutes (2nd ring valve). Remove the roulades and keep warm. Puree the sauce with the hand mixer, season to taste and, if necessary, bind with a sauce thickener.
  5. It goes well with dumplings or ribbon noodles and salad.
  6. Tip: You can also use 10 g flour and 50 ml red wine for binding.
