Ingredients
- 250 g pistachios, roasted, without salt
- 200 g crème fraîche
- 120 g cream
- 300 ml milk
- 6 tablespoon sugar
- 1 tablespoon vanilla sugar

- Peel the pistachios and discard the shells, then put all the ingredients in a blender and puree until the pistachios are finely ground.
- Gradually pour the mixture into the ice cream maker and allow to freeze into a creamy ice cream mixture in about 30 minutes.
- Tip: Take the ice cream out of the freezer 20 minutes before serving and let it thaw, then the ice crystals will re-form and the ice cream will be smooth and creamy again.
