Orange Buns Stuffed with Curd

Friends, I liked so much to surprise you! Today is a super dough, delicious, soft and orange! And the filling that we love since childhood. And, of course, a new way of sculpting buns. Orange cottage cheese buns turn out to be very beautiful!

Ingredients

For the dough:

  • Flour – 400 g + for working with dough
  • Orange juice – 230 ml
  • Dry yeast – 1 teaspoon
  • Egg – 1 pc.
  • Butter – 40 g
  • Sugar – 2 tbsp
  • Salt – 1 pinch

For filling:

  • Curd 9% – 200 g
  • Orange (zest) – 1 pc.
  • Sugar – 2 tbsp (to taste)

To grease buns:

  • Yolk – 1 pc.
  • Milk – 1 tbsp

Directions

  1. Cut the orange in half and squeeze the juice out of it.
    We make a quick dough. To do this, add sugar, yeast and a couple of tablespoons of flour to the juice. Mix well. Let it stand for 3-4 minutes.
  2. Then sift the flour into a larger bowl, add salt. We mix.
    We make a depression in the flour and pour in the orange dough, add the egg.
  3. We knead the dough. Putting the dough into a ball.
  4. We introduce the butter last. Knead the dough for about 5 minutes.
    The dough is soft and very aromatic.
  5. Cover the bowl with the dough with a foil or lid. Let the dough rise in a warm place for 40-60 minutes.
  6. Slightly knead the dough, divide it into equal 10 parts (I have 80 g each) and round.
    Let the blank buns stand for 10 minutes on the table under a plastic wrap or damp towel.
  7. During this time, we will prepare the filling.
  8. Rub the orange zest into a bowl of cottage cheese (I had the third one) and add sugar. We mix. This is our filling.
  9. We dust the table with flour. We try to roll out each piece of dough into a square of 13×13 cm. Then we cut these dough pieces into six strips.
  10. We intertwine the strips together. To do this, fold two strips of dough crosswise. Then on both sides of the strip of dough, which is from below, lay out two more strips. Now we lift the lowest strip on both sides and put another strip of dough on both sides. We return the raised strip to its original position.
    I liked this sculpting method.
  11. Put a tablespoon of curd filling in the center of weaving.
  12. We form buns by connecting in turn all opposite ends of the dough strips in pairs.
    Turn the buns over and put them in metal muffin tins.
  13. Preheat the oven to 180 degrees.
    We spread the buns on a baking sheet. Before the oven, grease the buns with yolk mixed with milk.
  14. Without proofing on the table, we send the buns into the preheated oven. We bake orange buns with cottage cheese at 180 degrees, for 10 minutes in time (focus on your oven).
    Let the buns cool on the wire rack.
