Ingredients

  • 500 g flour (type 405)
  • 500 g potato (s)
  • 30 g yeast
  • 15 g salt
  • 5 g coriander, round
  • 1 egg (s)
  • 200 g walnuts
  • 200 g hazelnuts
  • 200 ml water

Instructions

  1. Boil the potatoes in their skins, let them steam and peel them.
  2. Remove some water and dissolve the yeast in it.
  3. Roughly chop the nuts and roast them in a dry pan.
  4. Careful, the nuts shouldn`t get oily or burn!
  5. Sift the flour into a bowl, add the salt, coriander and the nuts. Press the potatoes into the flour with the potato press while still warm. Add the egg, the dissolved yeast and the rest of the water and knead into a compact dough. Cover and let the dough rise for approx. 1 hour. Divide the dough and shape into 2 baguettes. Place on a baking sheet lined with baking paper and cover again for approx. 1 hour.
  6. Bake in a preheated oven at 220 degrees for approx. 30 minutes until crispy and brown.
