  • 750 g potato (s), peeled and sliced
  • 1 onion (s), red, diced
  • 500 g puff pastry
  • 2 spring onions, finely chopped
  • 150 ml cream
  • 2 egg (s), whisked
  • salt and pepper

Instructions

  1. Bring water to a boil in a saucepan. Add the potatoes and cook for about 5 minutes. Then drain well and let cool.
  2. Mix the red onion, spring onion and potatoes in a bowl. Add 2 tablespoons of cream and season everything with salt and pepper. Halve the dough and roll out into 2 circles, each 23 and 25 cm in diameter.
  3. Place the smaller circle on a greased baking sheet and cover with the potato mixture. Leave a margin of 2-3 cm. Brush this with part of the egg mixture.
  4. Place the larger piece of dough over the potatoes. Press the edges together well and roll up a small piece. Poke a hole in the top of the dough to allow the steam to escape.
  5. Brush the prepared cake with another part of the egg mixture and bake in an oven preheated to 200 ° C for 30 minutes. After this time whisk the rest of the egg mixture with the cream and pour into the hole in the dough cover.
  6. Bake the cake for another 15 minutes, then let cool for 30 minutes and serve.
