Ingredients

  • 1 cup lentils, red
  • 1 onion (s)
  • 1 can coconut milk
  • water
  • Vegetable broth, instant
  • Curry powder, yellow
  • Chilli powder
  • Garlic granules

Instructions

  1. Briefly wash the lentils in a colander with cold water and place in a saucepan. Then fill up with water until it is approx. 2 - 3 cm above the lenses.
  2. Cook the whole thing on the stove (does not have to be set to full heat, but it works faster) and just before the water has boiled down, add the desired spices. If you like to eat onions, you can also finely chop and sweat an onion and add it now.
  3. Now add the coconut milk (400 ml) and simmer over medium heat until the lentils melt together. If you like it less mushy, you can simply reduce the amount of coconut milk, then the whole thing doesn`t have to simmer for so long.
  4. I got the recipe from a friend in Sri Lanka, so everything is original except for the vegetable stock.
