Semolina Casserole with Pistachios and Coconut

Wet, orange syrup-soaked semolina casserole with corn oil, coconut, and pistachios. This manner can easily replace any birthday cake!

Ingredients

  • Flour – 140 g
  • Semolina – 250 g
  • Eggs – 5 pcs.
  • Corn oil – 240 g
  • Baking powder – 25 g
  • Coconut flakes – 100 g
  • Orange juice – 300 ml
  • Pistachios – 100 g
  • For syrup:
  • Water – 100 ml
  • Orange juice – 100 ml
  • Sugar – 150 g

Directions

  1. Peel the pistachios. Pour them onto a baking sheet and dry in the oven.
  2. Pour oil into a bowl of eggs with continuous stirring. Then the orange juice.
  3. Add coconut flakes and semolina, continue stirring.
  4. Sift flour with baking powder. Add to the dough. Stir until smooth.
  5. Chop the pistachios. Add to the dough. Mix. Pour the mixture into baking tins, half full.
  6. Sprinkle with pistachios on top. Bake for 20-25 minutes at 180 degrees.
  7. Pour water into a saucepan. Add orange juice.
  8. Add sugar. Cook, stirring occasionally until the sugar is completely dissolved.
  9. Soak the prepared casserole directly in the form with plenty of syrup.
