Ingredients
- 100 g suar
- 100 ml orange juice, freshly squeezed
- 2 tablespoon balsamic vinegar
- 100 ml vegetable stock
- 4 tablespoon olive oil
- salt and pepper
- 800 g strawberries
- 6 orange (s)
- 2 chilli pepper (s)
- 30 g walnuts
- 1 bunch spring onion (s)
- 1 ½ bunch basil
- 1 head lettuce

- Caramelize the sugar in a small saucepan until light brown. Deglaze with orange juice, balsamic vinegar and stock. Stir until the sugar is completely dissolved. Reduce the brew by half. Add 3 tablespoons of olive oil and allow to cool. Season with salt and pepper.
- Wash, clean and quarter the strawberries. Fillet the orange and collect the juice. Cut the chilli pepper into very fine thin strips. Roughly chop the walnuts. Wash and clean the spring onions and cut into 1 cm long, diagonal strips
- Heat the remaining olive oil in a pan and roast the walnuts in it and remove them. Then sauté the spring onions in it for 2 - 3 minutes and remove. Pluck the basil leaves, pluck the larger leaves into small pieces. Mix all ingredients and let them steep for about 10 minutes. Arrange on the salad and serve soon.
