Ingredients

  • 2 egg (s)
  • 20 g butter (semi-fat butter)
  • 500 g quark, lean
  • 150 g semolina (soft wheat semolina)
  • 1 lemon (s), juice and zest
  • sugar or sweetener
  • 50 g suar and 2 teaspoons cinnamon for sprinklin

Instructions

  1. Mix the quark, butter, lemon juice and zest well, add the eggs, continue stirring and stir in the semolina and sweetener or sugar to taste and refrigerate for at least 15 minutes. Form dumplings out of it with a spoon and let them steep in salted water (just below the boiling point) for about 6 to 8 minutes, if necessary try to see whether they are already done.
  2. Carefully drain the dumplings and serve sprinkled with the cinnamon sugar.
  3. We recommend any kind of fruit compote or puree, made by yourself or from a glass, depending on the season and the time required. So far I have eaten the dumplings with plum, pear and mandarin compote as well as pureed strawberries, oranges and mangoes and found each variant delicious.
