Ingredients

  • 4 slices roast beef, raw ( - 5 cm thick) or
  • small steak (s) (T-Bone), the best quality
  • 2 tablespoon olive oil the best quality
  • 1 sprig rosemary
  • pepper
  • Salt (fleur de sel)

For the vegetables:

  • 300 g rocket
  • 12 cherry tomato (s), fresh, good product, halved
  • 3 tablespoon olive oil the best quality
  • 1 tablespoon balsamic vinegar, very good quality
  • salt and pepper

Instructions

  1. The quality of all ingredients, but especially that of the meat, determines this recipe. If possible, buy beef from Tuscan Chianina beef for this Tuscan recipe. If in doubt, take fillet of beef, although this dish is not made with fillet.
  2. Depending on the thickness, the meat is seared in half of the oil for 1 - 2 minutes on each side, or grilled, salted, peppered and wrapped in aluminum foil to rest and placed in the 60 ° C oven for a few minutes. Place on the edge of the grill when grilling.
  3. Now add the rest of the oil with the rosemary to the pan to flavor it at a low temperature. Mix the washed and dried rocket with the tomatoes with a dressing of olive oil, balsamic vinegar, salt and pepper and divide between 4 plates.
  4. Cut the meat each piece with a very sharp knife into thin slices, also with the T-Bone, cut parallel to the middle bone and spread on the rocket, pour the warm, rosemary-flavored oil over the meat without the herbs and serve immediately.
  5. The meat will be crispy on the outside and almost raw on the inside. A very minimalistic dish without any frills.
