Ingredients

For the dough:

  • 250 g flour
  • 2 teaspoons rapeseed oil
  • 1 teaspoon salt
  • 100 ml water

For covering:

  • 100 g crème fraîche
  • 50 g cheese (Gouda, Emmentaler), rated
  • 1 small zucchini
  • 1 red pepper (s)
  • 1 onion (s)
  • 3 spring onion (s)
  • salt and pepper
  • 200 g turkey breast fillet (s)
  • 10 ml sauce (Chipotle Tabasco)

Instructions

  1. Dough:
  2. Mix the flour with the salt and oil. Gradually add the water, the dough should be firm and not sticky. Let the dough rest for about 30 minutes.
  3. Covering:
  4. Wash the vegetables and cut into thin slices.
  5. Cut the turkey breast fillet into strips and marinate in chipotle tabasco sauce (a sauce made from smoked jalapeno) and then fry briefly in the pan. It doesn`t have to be done, because it`s still going to be in the oven.
  6. Divide the dough into 4 balls of equal size and roll out or, better, press as flat as possible with your fingers. Brush the approx. 3 mm thin dough cakes with crème fraîche, sprinkle with the grated cheese, spread the vegetables on top and season with salt and pepper. The vegetarian version is ready. If you want, distribute the meat on top at the end.
  7. Bake the tarte flambée at maximum oven heat (230 ° C top and bottom heat) until the edge is lightly brown, which takes about 10 minutes.
