Ingredients
- 200 g tofu, firm
- 0.5 ½ onion (s)
- 1 clove garlic
- 1 carrot (s)
- 0.5 teaspoon ½ ginger root, freshly grated
- 1 egg white
- 0.5 tablespoon ½ curry powder
- 3 stalks parsley, freshly chopped
- 1 tablespoon soy sauce
- salt
- nutmeg
- 3 tablespoon breadcrumbs
- 1 tablespoon oil, for frying

- Finely mash the tofu with a fork. Peel onion and garlic and chop finely. Finely chop the parsley. Roughly grate the carrot. Knead the tofu with onion, garlic, carrot, parsley, ginger, egg white, soy sauce, breadcrumbs and curry. Season to taste with salt and nutmeg and let rest in the refrigerator for about 30 minutes.
- Shape the tofu mixture into small, flat burgers. Heat 1 tablespoon of oil in a pan and fry the burgers until crispy until golden brown.
- This goes well with mashed potatoes.
