Ingredients
- 400 g white bread, Italian
- 1 ½ kg tomato (s)
- parsley
- 800 g mushrooms
- 2 cloves garlic)
- 16 tablespoon olive oil
- 6 tablespoon balsamic vinegar
- 2 scoops mozzarella each 15 g
- 8 tablespoon vinegar (white wine vinegar)
- salt and pepper

- Preheat the oven to 200 ° C.
- Wash and cut tomatoes into eighths. Clean and chop the herbs and place in a bowl with the tomatoes.
- Clean the mushrooms and cut them into slices. Heat 4 tablespoons of olive oil and fry the mushrooms in it. Peel and chop the garlic and fry briefly. Deglaze with balsamic vinegar and let cool down a little.
- Dice the bread, place on a baking sheet and drizzle with 4 tablespoons of oil. Then slide the tray into the oven on the top rail and roast the bread until crispy for about 5 minutes. Take out and let cool down lukewarm.
- Dice the mozzarella. Add to the tomatoes together with white wine vinegar and the remaining 8 tablespoons of olive oil. Season everything vigorously as needed. Fold in the toasted bread cubes and mushrooms and serve the salad immediately.
