Turkey Stew with Pumpkin and Apples

A tasty and healthy dish of turkey, pumpkin, and apple fillets, which is also easy to prepare. Pumpkin and apples make turkey meat juicy and tender, and basil, oregano, and garlic pepper – unusually aromatic.

Ingredients

  • Turkey fillet – 450 g
  • Pumpkin – 350 g
  • Apples – 350 g (2 pcs.)
  • Onions (large) – 280 g (2 pcs.)
  • Garlic – 2 cloves
  • Hot red pepper – 2-3 cm
  • Dried basil – 1 teaspoon
  • Dried oregano – 1 teaspoon
  • Garlic pepper – 1/3 teaspoon
  • Salt – 1 teaspoon (to taste)
  • Vegetable oil (for frying) – 15-30 ml (1-2 tablespoons) 

For filing (optional):

  • Fresh parsley – 1-2 branches
  • Lettuce leaves – 2-3 pcs.

Directions

  1. We wash the turkey fillet, dry it, and cut it into pieces with a size of 5-6 cm.
  2. Heat vegetable oil in a frying pan. We spread the chopped turkey fillet and fry over high heat for 7 minutes, until golden brown.
  3. Peel the onion and cut it into large cubes.
  4. Add the onion to the turkey meat, fry for 2-3 minutes. Then add 4-5 tablespoon. tablespoons of water, reduce heat. Simmer the contents of the pan over low heat, stirring occasionally, for 20 minutes.
  5. During this time, peel the pumpkin and, if necessary, from the inside with seeds and cut into medium pieces (slightly smaller than the turkey meat). Cut the apples into large slices and remove the seeds.
  6. After the time has passed, check the readiness of the turkey. To do this, pierce a piece of turkey with a fork. If the fork comes in with a little effort, then immediately add pumpkin and apples. If not, then simmer for another 5 minutes. Add salt, oregano, basil, a few pieces of hot pepper, and garlic to the turkey, pumpkin, and apples. Mix everything and continue to simmer for 15 minutes, until the pumpkin is soft (focus on the variety and cutting of the pumpkin).
  7. Peel the garlic, chop coarsely and add to the pan. Turn off the heat, cover the pan with a lid, and let the dish brew.
  8. When serving, garnish with parsley sprigs or lettuce leaves.
