Ingredients

For the ground:

  • 170 g flour
  • 0.5 teaspoon ½ baking soda
  • 1 pinch (s) cinnamon powder
  • 1 pinch (s) salt
  • 1 tablespoon egg substitute powder (flaxseed egg)
  • 95 g veetable mararine
  • 150 grams sugar
  • 2 tablespoon peanut butter or another nut butter or sugar beet syrup
  • 0.5 teaspoon ½ vanilla extract
  • 1 handful chocolate chips
  • 1 packet Oreo biscuits, approx. 76 g

For the dough:

  • 200 g flour
  • 0.5 teaspoon ½ baking powder
  • 100 g suar
  • 30 g cocoa
  • 1 pinch (s) salt
  • 60 g chocolate, melted
  • 30 g veetable mararine
  • 250 ml plant milk (plant drink)
  • 0.5 teaspoon ½ vanilla extract

Instructions

  1. For the ground:
  2. Prepare the flaxseed egg. Mix 1 tablespoon of ground flaxseed with 2 tablespoons of water and let it soak for at least 5 minutes.
  3. Mix the flour, baking soda, cinnamon and salt in a bowl and set aside. In another bowl, mix the margarine and sugar with a hand mixer until you get a homogeneous mixture. Then add the flaxseed egg, vanilla extract and peanut butter and stir everything well. Add the flour mixture step by step and use the mixer to make a dough. Fold in the chocolate chips with a spoon or spatula.
  4. Line a 23 x 23 cm or 25 x 25 cm baking pan with baking paper or grease it well. Pour in the cookie dough and press flat. Spread the oreos on top, only the original cookies are vegan.
  5. Preheat the oven to 180 ° C top / bottom heat.
  6. For the brownie dough:
  7. Mix the flour, baking powder, sugar, cocoa and salt in a bowl. Melt the chocolate and mix it with the margarine in a small bowl. Add the chocolate mixture and vanilla extract to the dry ingredients and stir. Pour the brownie mixture over the cookie dough.
  8. Bake in the preheated oven for about 35 minutes on the middle rack.
  9. Take out and let cool down briefly. Peel off the baking paper and cut the cake into small pieces.
