Ingredients

  • 500 g potato (s)
  • 2 spring onion (s)
  • 1 bell pepper (s)
  • 1 teaspoon smoked salt
  • 0.5 teaspoon ½ cumin powder
  • 0.5 teaspoon ½ garlic powder

Also: (for the vegan scrambled eggs)

  • 200 g silken tofu
  • 1 teaspoon kala namak
  • 1 teaspoon cornstarch
  • 0.5 teaspoon ½ turmeric

Instructions

  1. Chop the vegetables and set aside the green part of the spring onions. Dice the potatoes and pre-cook them in steam for 5 minutes. Mix the ingredients for the vegan scrambled eggs in the blender and set aside.
  2. Fry the potatoes in vegetable oil in a large pan. Stir in the spices and smoked salt. Add the pepper pieces and the white part of the spring onions, season lightly with salt and pepper and fry for 2 minutes.
  3. Stir in the vegan scrambled eggs and let thicken for 3 minutes. Finally stir in the green part of the spring onions. A couple of tomato wedges go perfectly with the farmer`s breakfast.
