Ingredients

  • 600 g apples, rated
  • 100 g raisins
  • 3 tablespoon rum
  • 1 tablespoon lemon juice
  • 1 tablespoon cinnamon
  • 2 tablespoon cane sugar
  • 315 g whole spelled flour
  • 35 g flaxseed flour, alternatively more wholemeal spelled flour
  • 1 packet baking powder
  • 1 pinch (s) salt
  • 100 g nuts, mixed (almonds, hazelnut, walnut, macadmia, cashew etc )
  • Fat for the shape

Instructions

  1. Wash the apples and grate with the peel. Mix immediately with lemon juice. Then add the rum, raisins, cinnamon and cane sugar and mix everything together well. Add flour, baking powder and salt and knead everything into a dough. Finally knead in the nuts. Put the dough in a greased loaf pan. Bake in a preheated oven at 180 ° C top / bottom heat for 50 - 60 minutes. Every now and then check whether the cake is not getting too dark and cover with aluminum foil if necessary. Tastes very tasty fresh out of the oven, but also if it pulls through for a few days.
