Ingredients

  • 6 onion (s)
  • 150 g butter
  • 1 kg rice
  • 2 liters broth
  • 240 g parmesan, (sliced)
  • 300 g minced meat
  • 1 can peas
  • 1 ½ tablespoon sugar
  • 250 g mozzarella
  • 4 egg (s)
  • 500 g tomato (s), passed
  • salt and pepper
  • Breadcrumbs, (coarse)
  • Fat, for frying
  • oregano
  • basil
  • garlic

Arrancini (Italian Rice Croquettes)

Instructions

  1. Dice onions and sauté in butter. Lightly sauté the rice. Deglaze with the broth and simmer gently for 30 minutes. Remove from the heat and add the mozzarella to the dry rice and stir until everything is just warm.
  2. Step 2: Sear the minced meat and season with salt & pepper. Stir in tomatoes, 1/4 liter of water and peas. Then season with the spices and sugar. Shape the warm rice into balls. Press a hole in it and pour in the minced meat and chopped mozzarella. Close the hole, pull through the beaten eggs and turn in breadcrumbs. Bake in enough fat for about 8 minutes.
