Bacon Rolls with Chicken Liver Baked in the Oven

Chicken Liver Bacon Rolls are a delicious hot snack that’s easy to make with the ingredients available. Delicate and juicy meat appetizer will complement any festive feast, as well as a home lunch or dinner. It is delicious to eat baked chicken liver in bacon not only warm but also cold.

Ingredients

  • Chicken liver – 300 g
  • Bacon (preferably thin slices) – 320 g
  • Garlic – 2 cloves
  • Soy sauce – 2 tbsp
  • Lemon juice – 1 tbsp
  • Vegetable oil – 1 tbsp
  • Honey – 1 teaspoon
  • Ground paprika – 0.5 teaspoon
  • Ground black pepper – to taste
  • Salt to taste

For filing:

  • Red onion – 100 g
  • Sugar – 1 teaspoon
  • Lemon juice – 1 tbsp
  • Salt – 0.25 teaspoon
  • Ground black pepper – 1-2 pinches
  • Fresh herbs (dill and parsley) – to taste

Directions

  1. It is better to buy raw smoked bacon, already cut into thin slices. Both pork and beef bacon are suitable – your choice. But if you have a brisket in a whole piece, like mine, then you cannot do without a sharp knife, since at home it is difficult to cut very thinly.
  2. Cut the liver into two halves. Cut off excess fat, if any. Rinse the liver well under running water and dry it.
  3. For the marinade, in a bowl, combine the soy sauce, vegetable oil, honey, lemon juice (1 tablespoon), black pepper, ground paprika, and salt to taste.
  4. Peel the garlic and cut it across into thin slices. Add the garlic to the marinade and stir to dissolve the honey.
  5. Place the prepared liver in the marinade. Stir and let sit for 15-20 minutes. Turn on the oven to preheat to 200 degrees.
  6. I froze the brisket (for the convenience of cutting) in the freezer and cut it into thin slices.
  7. Place a piece of liver on the edge of the bacon strip. Roll and secure the edge with a toothpick. Do this with all the liver. I got 12 rolls.
  8. Place the rolls in a baking dish. Top the rolls with the remaining marinade. Send the form into an oven preheated to 200 degrees for 20-25 minutes.
  9. In the meantime, you can start serving. Cut the red onions into thin half-rings and place them in a bowl. Add salt, sugar, and black pepper. Add lemon juice (1 tablespoon). Stir and let sit for 15-20 minutes.
  10. Rinse and chop the herbs finely. Add to onion and stir.
  11. Bacon and chicken liver rolls are ready.
  12. Place the chicken liver and bacon rolls on a plate, garnish with pickled onions and herbs and serve. Bon Appetit!
