Ingredients

  • 100 g date (s), chopped
  • 75 ml rum, or possibly orange juice
  • 175 g flour
  • 2 teaspoons baking soda
  • 0.5 ½ teaspoon, leveled baking soda
  • 1 pinch (s) salt
  • 125 g butter
  • 90 g suar
  • 60 g maple syrup
  • 2 large egg (s)
  • 4 medium banana (s), ripe
  • 60 g nuts, (pecans or Brazil nuts), chopped
  • 1 teaspoon powder, (maple extract), optional

Instructions

  1. Put the date pieces together with the rum in a small saucepan and bring to the boil briefly. Remove from heat, cover with foil and let steep for about an hour. After this hour, pour the pieces of dates into a sieve and let them drain, discard the excess rum syrup or use it in some other way (perhaps for soaking cakes or biscuits?).
  2. Preheat the oven (electric stove approx. 180 ° C, convection air approx. 165 ° C). Grease a rectangular cake or box cake pan or line it with baking paper.
  3. Finely grind the bananas with a fork. Melt the butter in the microwave. In a separate bowl, mix the flour, baking powder, baking soda and salt well. Mix the sugar with the maple syrup in a large bowl. Then beat the cooled, melted butter with the sugar mixture until it is slightly thick and a little lighter. Then stir in one egg after the other well into the butter mixture. First stir in the banana puree and maple extract and then fold in the nuts and pieces of dates. Finally, gradually fold in the flour mixture with a spoon (just don`t stir too vigorously or too long, otherwise the dough will be tough).
  4. Pour the batter into the loaf pan and bake on the middle rack of the oven for about 50-60 minutes. If necessary, cover with aluminum foil after 3/4 of the time if the cake should get too dark and perhaps prick the center of the cake with a wooden skewer. The cake is ready when there is no longer any wet dough sticking to the skewer, but the skewer is reasonably clean and dry, apart from any banana sauce.
  5. When it`s done, take it out of the oven and let it cool for 15 minutes before turning it over to cool completely. The cake is easier to cut and tastes better, the cooler it is and the more permeable it is. But it also crumbles a bit because it`s so juicy.
  6. Remarks:
  7. Unfortunately, maple extract or maple extract is not available in this country, but it can be purchased in online shops for baking accessories. A worthwhile investment for me, because I love the maple taste and the extract does not only look good in cake batter, but also in pancake batter, cake creams, cupcake icings, cookies and cookies.
  8. If children are eating, the rum can also be replaced with orange juice.
